Fiore, which has proposed another excellent product, is an oil farm founded by Željko Mirković Fiore in Vodnjan in the mid- 90's. Today the specialized olive grove stretches over a surface of 4 hectares with 1,100 trees. In the last oil harvest 105 quintals of olives were produced, with a yield of about 9 hectolitres of extra virgin olive oil. We recommend the excellent farm selection, the Extra Virgin Fiore, which is a beautiful intense limpid golden yellow colour with light green hues. Its aroma is rich and rotund, endowed with ample fragrant notes of mint and field balm, together with elegant vegetal hints of artichoke and wild thistle. Its taste is complex and strong, with a spicy flavour of black pepper, a note of lettuce, chicory and a distinct almond finish. Bitterness is definite and pungency is distinct and harmonic. It would be ideal on bean appetizers, boiled legumes, marinated amberjack, seared potatoes, ovoli mushroom soups, pasta with vegetables, grilled fish, octopus tartare, baked poultry or lamb, goat cheese.
