We welcome the first appearance in this Guide of the farm Oleum Maris, founded in 2005 by Velimir Jurić in the district of Vodnjan, not far from Pula. The estate consists of a large 80-hectare olive grove with 14,500 young trees, not entirely productive. In the last harvest 50 quintals of olives were produced, equal to a yield of about 5 hectolitres of extra virgin olive oil. We recommend the selection proposed by the farm, the Monocultivar Extra Virgin Oleum Maris - Istarska Bjelica, which is an intense limpid golden yellow colour with slight green hues. Its aroma is fine and delicate, characterized by distinct vegetal hints of artichoke and chicory, together with notes of officinal herbs, especially basil, field balm and parsley. Its taste is mellow and harmonic, with a flavour of lettuce, a note of unripe tomato and an almond finish. Bitterness and pungency are present and balanced. It would be ideal on swordfish carpaccio, marinated chicken, tomatoes au gratin, grilled radicchio, asparagus soups, meat cous cous, steamed blue fish, roast poultry or pork, medium mature cheese.
