A brilliant performance for Chiavalon in Vodnjan, which combines a high quality production with the young Sandi Chiavalon's passion and enthusiasm. He has been running the farm for some years, following his family tradition. Today there are 22 hectares of specialized olive grove with 6,100 trees. In the last harvest 250 quintals of olives were produced and 70 purchased, with a yield of about 38 hectolitres of oil. We recommend the excellent Extra Virgin selection Ex Albis, which is an intense limpid golden yellow colour with delicate green hues. Its aroma is definite and rotund, rich in vegetal hints of freshly mown grass, celery and broad beans, together with fruity hints of medium ripe tomato, banana and white apple. Its taste is ample and complex, with notes of country vegetables, black pepper and officinal herbs, especially field balm and basil. Bitterness and pungency are distinct and balanced. It would be ideal on octopus appetizers, spinach salads, marinated tuna, barbecued radicchio, artichoke purée, pasta with meat sauce, blue fish au gratin, roast red meat or game, medium mature cheese.
